Picked by hand during the last week of April. Warm summer, followed by cool autumn
Fermentation Notes:
Initial fermentation, as well as malolactic fermentation is completed in stainless steel tanks using the rack and return method of cap management. 100% malolactic fermentation.
Tasting Notes
Intense ruby red color. Aromas of cherries, delicate notes of pepper and soft oaky aromas. Soft and balanced on the palate with cherries and cassis flavors as well as mild and refined touches of oak to enhance its fruit and add complexity. Perfect combination with red meat, pasta or fish and white meat with spicy sauces.
This wine goes very well with fish and pasta, also could be use like and aperitif. To drink now, but it will preserve their characteristics for at least 3 years. The perfect temperature for serving is 16°-19°C. (62º – 66º F).
